Bran Muffin Recipe



  • 1 1/2 cups oat bran (or wheat bran)
  • 1 cup organic milk (or milk alternative such as rice milk)
  • One tbsp lemon juice 
  • 1/3 cup vegetable oil
  • 1 organic free range egg
  • 2/3 cup brown sugar 
  • 1/2 tsp vanilla extract
  • I cup whole wheat flour 
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt 
  • *optional add 1/2 cup raisins or walnuts 


  1. Preheat oven to 375 degrees.
  2. Line muffin tin with parchment paper liners or grease with coconut oil.
  3. Mix lemon juice and milk (or milk alternative) and leave aside for 10 minutes to make buttermilk.
  4. Beat eggs, oil, sugar and vanilla together using a stand mixer. 
  5. Sift remaining ingredients into separate bowl.
  6. Once buttermilk is ready, mix together buttermilk and bran and set aside for another ten minutes.
  7. Once this is ready, add the bran mixture to the mixer and stir.
  8. Stir in dry ingredients until just blended.
  9. Pour batter into prepared muffin tin.
  10. Bake 15-20 minutes.  Test with a wooden pick – If it comes out clean they are done!

Cool and Enjoy!  I love eating my bran muffins with a dab of butter or earth balance margarine.  Yummmmmm.
