Flourless Black Bean Brownies 

  

You would NEVER guess that these are high fiber and that there are beans in these brownies!  Black beans are super healthy- Google it!  

Ingredients:

  • 3/4 cup black beans 
  • 1/2 cup coconut oil
  • 2 eggs
  • 1/4 cup organic cacao powder 
  • 2/3 cup sugar 
  • 1/2 tsp baking powder
  • 1/2 tsp salt 
  • 1/3 cup oat bran
  • 1 tsp Madagascar vanilla extract 
  • 1/4 cup melted chocolate 
  • 1/4 cup chocolate chips

  
Method:

  1. Preheat oven to 350 degrees. Grease a 9×9 baking pan- bottom and sides.
  2. Blend beans and coconut oil in your magic bullet or other food blender.
  3. Blend beans & oil with eggs, cacao, and sugar in stand mixer on medium till well blended.
  4. Mix bran, salt and baking powder together and stir into batter.
  5. Add vanilla and melted chocolate.
  6. Stir in chocolate chips. 
  7. Pour mixture into prepared pan and bake 30 minutes or until set.
  8. Cool and enjoy!
