Flourless Chocolate Chip Banana Bread

  
Delicious!!! 🍌🍫 and a nice high fiber alternative to wheat flour baked goods. Oat bran is an excellent source of soluble fiber and will help to lower cholesterol and aid digestion.  I warned my family this may make them poop! 💩 Oat bran also has more protein, magnesium, calcium, iron, thiamin, phosphorous, riboflavin, and zinc. 

Ingredients:

  • 2 over-ripe bananas
  • 1 cup organic oats – made into flour with your magic bullet or food processor
  • 1 1/2 cups oat bran 
  • 3/4 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 3/4 tsp sea salt 
  • 1 1/2 tsp Madagascar vanilla extract
  • 1/3 cup organic skim milk (or nondairy alternative)
  • 1/2 cup pure organic maple syrup or honey
  • 1 1/2 tbsp apple cider vinegar
  • 1/2 cup chocolate chips

  
Method:

  1. Preheat over to 350 degrees.
  2. Grease loaf pan with coconut oil. 
  3. Blend all ingredients except chocolate chips in stand mixer. 
  4. Stir in chocolate chips.
  5. Pour batter into prepared pan and bake for 30 minutes.
  6. Turn off heat and LEAVE LOAF IN HOT OVEN for an additional ten minutes.
  7. Remove from oven and cool.  Enjoy!
