Homemade Coconut Milk Recipe

homemade coconut milk for whole30I loved having coconut milk in my coffee every morning at Anamaya (Yoga & Surf retreat) in Costa Rica.  Today I made my own as I start the Whole30 and go dairy-free.  I pretty much am dairy-free anyway but I always cheated with my coffee.  I’m loving my coffee this morning with this homemade coconut milk!  The premade coconut milk I was buying from the store has carrageenan in it which is a no no for this Whole30 program so I made my own and am really happy I did!  It’s so easy and delicious!!

  • 1 cup shredded coconut (sulphite free)
  • 4 cups hot water

  1. Place coconut in a large glass bowl (if using a hand blender) or in the carafe for your stand blender.
  2. Add four cups hot (almost boiling) water.
  3. Let stand for a few minutes.
  4. Blend with your blender.
  5. Strain using a cheese cloth, nut milk bag or fine strainer.  Press the coconut to get out all the milk.
  6. Store in a glass jar in the fridge for up to 4 days or freeze. I was thinking freezing in cubes might be a good idea for coffee and then defrosting the night before.
  7. You can use the left over pulp for flour or however you like.

Enjoy! 😊☕️🌴
