Homemade Lasagna Recipe

I made this Lasagna for my family Christmas party this year and my aunt has been texting me asking for the recipe ~ she said my uncle just loved it!   I did not take any photos as I was so busy preparing all the food and everything for the day but I promise to add photos soon!  This recipe was adapted from “The World’s  Best Lasagna” Recipe on Allrecipes.com.

Ingredients:

  • 1 lb ground veal
  • 1 lb lean ground beef
  • 1/2 cup minced onion
  • 3 cloves of garlic, minced
  • 28 oz crushed tomatoes
  • 2 cans tomato paste (5.5 oz)
  • 1 jar (700 mL) organic pasta sauce (I used President’s Choice Organics Tomato & Basil)
  • 1/2 cup water
  • 2 leaves fresh basil (chopped)
  • 1/2 tsp dried fennel seeds
  • 1 tsp Italian seasoning
  • fresh ground sea salt & pepper
  • 4 tbsp chopped fresh parsley
  • 9 lasagna noodles
  • 475 g Ricotta cheese
  • 1 organic egg
  • Block of Saputo Mozzarella Cheese cut into thin slices
  • 3/4 cup grated Parmesan Cheese

Method:

  1. Brown veal and ground beef with onions and garlic over medium heat.  Add crushed tomatoes, tomato paste, pasta sauce and water.  Stir in basil, fennel seeds, italian seasoning, salt and pepper, and 2 tbsps of the chopped parsley.  Simmer, covered for 1 1/2 hours, stirring occasionally.   Your house will smell heavenly!
  2. Bring a large pot of lightly salted water to a boil.  Cook the lasagna noodles according to package directions.  I do not like using the ready noodles that do not need to be boiled first.   Drain and rinse with cold water.
  3. In a mixing bowl, combine ricotta cheese with egg and remaining parsley.
  4. Preheat oven to 375 degrees.
  5. Use a 9×13 inch baking dish.  Spread 1 1/2 cups of the meat sauce on the bottom of the dish.  Arrange 3 noodles lengthwise over the sauce. Spread with one half of the ricotta cheese mixture.  Top with 1/3 of the mozzarella cheese slices.  Spoon 1 1/2 cups of meat sauce over the cheese and sprinkle with 1/4 cup of the parmesan cheese. Add another layer of noodles.  Top with remaining ricotta cheese mixture and another layer of mozzarella slices. Spoon 1 1/2 cups of meat sauce over the cheese again and sprinkle with 1/4 cup parmesan.  Now add the last 3 noodles.  Top with remaining meat sauce, last 1/3 of the mozarella cheese slices and the remaining 1/4 cup of parmesan cheese.
  6. Cover with foil and bake in preheated oven for 25 minutes.  Remove foil and bake for another 25 minutes or until top is golden and bubbly.   Enjoy!!!
