Warm Sweet Potato, Onion, Kale & Bean Salad

This recipe is garlicky deliciousness.  And it is yummy served warm (sweet potatoes and onions freshly roasted) but also can be enjoyed even the next day. 


  • 2 sweet potatoes
  • 1 sweet onion
  • 1/2 bunch Kale
  • 1 can mixed beans 
  • 1 large bulb garlic minced (or 2 small)
  • 1 tbsp olive oil 
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • Fresh ground Himalayan sea salt
  • Fresh ground pepper
  • 1/4 cup Fresh cilantro 


  1. Preheat oven to 425 degrees.
  2. Peel and dice sweet potatoes and place on cookie sheet or roasting pan.
  3. Chop onion and place on roasting pan.
  4. Drizzle one tbsp of olive oil over the potatoes and onions and toss to coat.
  5. Roast at 425 degrees for 25 minutes.
  6. Wash and chop kale. Place in large salad serving bowl.
  7. Drain and rinse beans and add to kale.
  8. Prepare dressing: combine minced garlic, olive oil, cider vinegar and salt and pepper to taste. Add cilantro and process with food processor or hand blender.
  9. Add dressing to kale and beans.
  10. Add potatoes and onions to salad bowl with kale and dressing and Toss salad to coat.
  11. Enjoy while potatoes and onions are still warm or save for later.
